Berry Topping

2 cups mixed berries (fresh or frozen)
1 tbsp lemon juice
2 tbsp balsamic vinegar (preferably aged)
2 tbsp monkfruit sweetener (or any substitute or sugar)
½ tsp salt
¼ cup water

Slice up strawberries if they are large

Combine ingredients into a sauce pan.
Have at a medium heat. Turn down heat to make sure it doesn’t boil and burn. Stir and let reduce until it’s a light syrup consistency.

Optional:
Add cornstarch or teaspoon of gelatin powder if you want to thicken.
You can add maple syrup to it or use as is for pancakes, waffles, or french toast.
