1 lb ground turkey
½ cup red lentils
1 cup quinoa
1 cup frozen peas
1 tsp oregano
1 tsp turmeric
3 Tbsp vinegar
3 Tbsp lemon juice
3 large garlic cloves (chopped)
1 medium sized onion (chopped or sliced)
Optional – add to taste
Salt & black pepper to taste
You can cook everything together either in a regular pot or crock pot.
Put all ingredients including quinoa and lentils into the pot with 4-5 cups of water. Wait to put in peas.
There should be enough water to allow quinoa and lentils to absorb.
Let the pot simmer for at least 15 – 20 min. You can stir occasionally.
Add water if need be. Add frozen peas last.
Add salt to taste.
